Rapunzel, Rapunzel . . .

Farm box brought us another new and exciting German green this week--Feldsalat, aka Rapunzel, Corn Salad, or Lamb's Lettuce. I like to call it Rapunzel, naturally.

Though I'm not sure I'd trade my unborn daughter to a witch for it, it is very tasty. It's a mild, very tender winter lettuce. Like purslane, it's packed with vitamins and occasionally considered a weed (What's up with that? Eat your weeds, people!). LCBF and I had it in a simple salad a few days ago with blackberries, drizzled with balsamic vinegar (served alongside Bubble & Squeak Cakes). Very nice.
