I went for easy-peasy weekend dinners in anticipation of the labor-intensive weekday pastafest I'm planning for when my my new pasta machine arrives on Tuesday.
Seitan, Mashed Potatoes, and Broccoli
Sometimes I get a craving for a two sides-and-a-main dish type meal--especially during the winter. So on Saturday it was Westsoy seitan, mashed russet potatoes with skins left on, and broccoli. Quick and easy, but lots of dishes.

Black Bean Burritos
Black beans simmered with onion and bell pepper and seasoned with salt, pepper, and chili powder, stuffed in a flour tortilla with cheddar and jack cheese, greens, salsa, and sour cream. High protein, super yummy.
